Movies in your iTunes library are locked by the "fairplay" DRM system, which dictates that movies and audiobooks(musics are DRM free since 2009) can only be played on a limited number of apple devices, if you wan to play your iTunes purchased 1080P movies through Xbox 360, you may have to remove the DRM from iTunes movies(.m4v).
Also since Xbox 360 was brought by microsoft, simple remove the DRM may not be able to have the m4v files played on a microsoft ecosystem, you may need to convert m4v to WMV or avi which supported by Xbox 360
